Ratatou for You? |
Since I'm seeing this cute movie, Ratatouille, it brought back memories of this great vegetable dish which was a favorite of my mother's (translation: we ate it a lot). Although, I've seen it done in various ways with different flairs and touches (my mother used corn and bell pepper in hers), I'm partial to what I like. LOL.
My version's below. I make a lot since it doesn't seem to last long in my house. Notice I don't bother with exact measurements when it's stuff I make all the time.
About 2 TB of olive oil 1 large eggplant, cubed 1-2 yellow squash (I love these so invariably, I include a bunch), sliced 1 zucchini squash (Not so fond of these, so I don't use them as much), sliced 1 large onion, sliced 2 cloves garlic, minced 4 large tomatoes, chopped or 2 cans (14.5 oz each) of diced tomatoes About a TB of oregano About a TSP of thyme and basil Dash of parsley Mozzarella cheese
In a saucepan, heat olive oil over medium heat. Add garlic and onions then add eggplant and squash. Cover and cook for 10 minutes, stirring occasionally. As vegetables cook, add tomatoes and herbs. Sprinkle with mozzarella cheese before serving.
Typing this has made me a tad hungry so I'm off to cook some ratatouille!
